We haven’t yet gotten to the homemade lanterns but we did whip up a batch of horseshoe cookies for the feast of St. Martin.
I used this recipe, and they are very good.
“Horseshoe cookies, huh?” Cate came into the kitchen as I was getting out the mixer. “What kind of cookies are they? Chocolate chip? Shortbread? Something else?”
“A kind of shortbread,” I replied, “Though the recipe includes a cup of oats.” I turned on the mixer and started creaming the butter, remarking, “I’ve never added oats to shortbread before.”
“Well,” said Cate, “They’re for his horse!”
