A Culinary Update

Just so you know, I made good on my promise to serve beets at the next meal.

It was a single serving, granted, and it was very, very good.

Diced beets + goat cheese + spinach leaves + a few squirts of this = I don’t care what the rest of my family thinks. Personally, I’m in heaven.

    Yum to the spinach and goat cheese, but I’m not too sure about the beets.

    I can eat beetroot straight from the can!…that’s how you can get it in Australia, basically pickled in vinegar.
    I also love balsalmic vinegar! Those spritz dressings are a great invention. No waste or mess and you can actually carry it with you if you so desire. 🙂

    My favorite salad — especially this time of year — is roasted beets, greens, crumbled blue cheese, toasted walnuts, and a balsamic dressing!
