Who doesn’t just love pumpkins? Who finds that they are inspired by just the sight of them? And who doesn’t just love a good pumpkin dessert? You don’t? My eyes narrow suspiciously. I shrug. I eat your dessert.
Here are three of the ways I’ve been inspired by these spherical orange wonders.
I. A Hole (or Several) in One
Take a largish pumpkin. Note that you may have one or two lying around the house. Using colorful wooden golf tees, pound a series of holes around the stem. Remove the tees and place them in a small plastic cup or bowl next to the pumpkin along with a child-sized plastic hammer. My little gals had so much fun with this!

II. Happy Pumpkin Cake to You!
All you do is bake two bundt cakes and put them together to make your pumpkin. An ice cream cone serves as your stem.

III. My Favorite Pumpkin Cookies
No Autumn’s complete without them.

I have been looking for a good pumpkin cookie recipe, I love your new site, “Come for Coffee”!
Were you really up at 4am posting it? How do you have enough energy for the day?

Margaret,
We’re studying Minnesota next week and I learned today that the Bundt pan was invented in Minnesota. How perfect that I found a recipe using Bundt pans at the Minnesota Mom site! Thanks for sharing–you made my day.

I clicked on the ‘go here’ and nothing came up. Can you tell what I did wrong?
By the way, I love your blog!

Betty,
Try clicking on just the word “here.”
If that doesn’t work, here’s the URL for the website: http://www.come-for-coffee-and-cake.blogspot.com
By the way, thank you!

Well, if you ever do make it to New York for coffee, I will know what to serve with it!
(I’m a big fan of pumpkiny desserts myself, and, if ever get a chance to try pumpkin pie ice cream from Baskin Robbins, my guess is you would love it!)

I LOVE #1. I think we will let my little boy do while we are carving. That is a super idea.

Thanks for the autumn cookie recipe. And how to make a pumpkin cake! I might have to do that for Thanksgiving. I’d love to know how you cook pumpkin. I’ve always bought canned, but know we won’t get around to carving all the ones we’ve bough.
