Just so you know, I made good on my promise to serve beets at the next meal.
It was a single serving, granted, and it was very, very good.
Diced beets + goat cheese + spinach leaves + a few squirts of this = I don’t care what the rest of my family thinks. Personally, I’m in heaven.
YUM!
Have to vote with your family on this one but I admire your adventurous spirit.
I’ve always liked beets. Steamed with a bit of butter.
Oh, Margaret, pass the beets, please.
Goat cheese makes anything good!
Oh my, that does sound heavenly.
Yum to the spinach and goat cheese, but I’m not too sure about the beets.
I can eat beetroot straight from the can!…that’s how you can get it in Australia, basically pickled in vinegar.
I also love balsalmic vinegar! Those spritz dressings are a great invention. No waste or mess and you can actually carry it with you if you so desire. 🙂

My favorite salad — especially this time of year — is roasted beets, greens, crumbled blue cheese, toasted walnuts, and a balsamic dressing!
I’m all for beets!
I have to say that this whole episode has Baby Blues written all over it! Love it!
